    The flavour of your water has a direct impact on the flavour of your coffee. The flavour of water is determined by the minerals and other matter present. The content of your tap water largely depends on where you live and how the water was treated. If you live near an ocean your water may have a slight sulfur smell due to the presence of sulfur producing microbes. Water taken from lakes can taste earthy from leftover plant matter and so on. The key takeaway is that any off flavours in your water before you brew your coffee are still going to be there when you're finished making it. Starting with distilled or reverse osmosis water is the best way to ensure you are starting with a clean slate when brewing coffee.

    Sodium Bicarbonate is used to add alkalinity to water which serves as a buffer to acidity. Sodium Bicarbonate is an ingredient in Lotus Water recipes as well as many roaster water recommendations.

Lotus water system works well

I used to use Third Wave packets for the coffee water, both filter and espresso (separate). But switching to the Lotus Water system works well, allowing us to change the water for every filter brew (if we want). Espresso water is more annoying since we use a 4L jug, which necessitates 50 to 55 drops of some of the solution. Overall more affordable too than TWW.

Fun tool for playing around with a bitter coffee

While it will be cheaper to make a saline solution by yourself, I found myself adding a single drop to a bitter brew and seeing how that affects it.

Essential for Water Blends

No complaints here, I buy this to supplement the other Lotus products ..I just happen to go through sodium the most. Nice to have this as a standalone vs buying the 4 pack

Works well with the potassium drops

I've found my best results come from a near equal combination of Potassium and Sodium, as far as controlling the alkalinity. I highly recommend the Rao/Perger recipe. Note that these drops have the circular tip.
