This exceptional dark tea, a second flush pick, undergoes a unique fermentation process with koji-kin, akin to that used in sake, miso, and soy sauce production. Grown in full sunlight to enhance antioxidant levels, the tea exhibits a mild astringency. With a reddish-brown hue, it boasts a sweet caramel and fruity aroma, complemented by a roasted root vegetal flavor with a hint of honey and an earthy finish. Production is limited due to stringent sanitary conditions necessary to protect the koji-kin.
