  Sensitivity of taste changes at different temperatures. Each taste receptor has its own zone of sensitivity. For example, our hot tactile receptors peak sensitivity at about 45°C and our sweetness around 37°C. This causes the same coffee to keep changing in taste as it cools down. Using the Compass to monitor temperature allows you to predict and control your drinking experience.
