    The B3 Specialty Coffee filter technology was developed together with Matt Winton, the 2021 World Brewers Cup Champion. For over a year, Matt worked together with Sibarist, testing trial materials and providing his expertise and feedback, leading to B3 and its unique composition and processes.

    "I've always been obsessed about narrowing down variables in coffee brewing, where I would lock all other variables, and focus on just one thing until I found the best. It wasn't until I started exploring the role of the paper filter in pour over brews, that I saw it's a huge factor!

    I found it difficult to get a paper that drew down quickly, but also had the clarity of flavour I wanted. So together with Joaquim and Lambert we sourced a whole new paper material that hadn't been used for brewing coffee before, and tweaked it to become what I believe is the best brewing paper available. Every parameter was tested; porosity, tensile strength, thickness, sealing, and shape, in order to come up with this final paper - it was a project we'd worked on for over 12 months.

    The result is a paper that flows very quickly, but more importantly, very evenly, and is a thickness that stands off the walls of the dripper, to reduce clogging, and maximize the potential of each brewer. With the B3 paper you can maximise the potential of your dripper through a more even extraction. A rigid, thicker paper encourages flow, but creates a clear, clean, sweet cup profile."

    The B3 FLAT Specialty Coffee Filter is the application of the B3 technology to the Sibarist FLAT filter design (for flat bottom brewers). The filter shape provides a brewing volume free from any obstacle, providing an even extraction of the coffee particles, uniform turbulences and full access to the coffee bed. The B3 rigidness produce a minimum contact surface with the dripper and provides a fast extraction, but its material thickness and low porosity provides sweeter and cleaner cups, avoiding bypass.

    The B3 HYBRID is a completely unique and innovative filter, designed by Sibarist for conical drippers that provides a hybrid between flat bottomed and cone brewing. Made with the B3 filter paper technology, the hybrid shape encourages flow through the dripper by providing a faster and higher extraction, reducing the clogging that might appear on high filtration materials and avoiding the concentration of fines in one point. Also, the B3 paper's porosity allows clarity of flavour, and the rigidity of its structure minimize the contact points with the dripper creating even, balanced cups.

    Sibarist is devoting the same care and attention to the filter that goes into obtaining an exceptional coffee. Paying attention to detail throughout the whole supply chain, from the origin of the raw material on estates and plantations to its local processing and manufacture in Barcelona.     FILTER PREPARATION

    1. Fold the 4 edges of the filter following the indentation marks on the paper. It is not necessary to keep the flat bottom shape of the filter; you just need to go over the folds.
    2. Place the filter on top of the dripper and press the central part of the paper downwards.
    3. Rinse the filter, starting from the centre and moving towards the outer edge by pouring hot water in a circular motion. Make sure that the entire surface of the filter is stuck to the walls of the dripper, without leaving any air channels between the filter and the filter holder.

    B3 HYBRID filters are packaged in a flat stack with pre-folded creases for users to fold.

    FILTER PREPARATION

    1. Fold the 2 pre bend marks of the filter following the indentation marks on the paper. It is not necessary to keep the flat bottom shape of the filter; you just need to go over the folds.
    2. Push down the bottom circular area of the filter
    3. Place the filter in the dripper.
    4. Rinse the filter, starting from the center and moving towards the outer edge by pouring hot water in a circular motion. Make sure that the entire surface of the filter is stuck to the walls of the dripper, without leaving any air channels between the filter and the filter holder.

Harder & slower then FAST FLAT filters

I did a comparison with the FAST FLAT filters on the Orea v4, and I felt like the extraction is less with the B3 paper.

Sibarist B3 Specialty Filters

I have purchased both the flat and hybrid variants of these filters, and so far I have enjoyed using them. In comparison to other filters I have used, like the untabbed Hario filters and Kalita options, I find that I can push a coffee finer in grind without running into issues with astringency. These filters have helped me get more out of some the lighter roasted coffees than I could with other filters. With that said, I do have to point out that it took me a decent amount of time to figure out how to properly and consistently fold each filter, but maybe that's a me problem rather than the filters. I really do enjoy the resulting cups from these filters, and would recommend picking up a pack to at least experiment with. For me, these will be reserved for special coffees I get to try, as the price point doesn't make sense for me to use as a daily driver filter.
